La Lutenitsa est une sauce rouge tr\u00e8s typique et d\u00e9licieuse en Bulgarie \u00e0 base de poivrons et consomm\u00e9e simplement sur un toast, avec ou sans fromage, ou pour relever le go\u00fbt de certaines viandes et garnitures. Je vais partager avec vous ma recette maison.\u00a0<\/span><\/h3>\n<p><span style=\"color: #000000;\">Apparemment, il existe de nombreuses fa\u00e7ons diff\u00e9rentes de pr\u00e9parer la Lutenitsa et chaque personne et chaque famille a sa propre recette pour la cuisiner.<span lang=\"en\">Parfois m\u00eame des recettes bien gard\u00e9es, tr\u00e8s secr\u00e8tes<\/span>.\u00a0<\/span><span lang=\"en\" style=\"color: #000000;\">Les recettes de sa fabrication sont aussi nombreuses que vari\u00e9es, mais \u00e0 chaque fois on retrouve \u00e0 la base les m\u00eames produits que les beaux poivrons rouges grill\u00e9s et les tomates m\u00fbres, les oignons \u00e9minc\u00e9s, les carottes r\u00e2p\u00e9es, les courgettes, les aubergines, les tomates vertes, ou encore les pommes de terre cuites. Pour les \u00e9pices, il y a du sel, du poivre, du cumin, du persil et quelques pinc\u00e9es de sucre. <\/span><span lang=\"en\" style=\"color: #000000;\">La plupart du temps, je l'ach\u00e8te dans le commerce, mais pour la premi\u00e8re fois (et pas la derni\u00e8re), j'ai d\u00e9cid\u00e9 de le faire moi-m\u00eame, \u00e0 la maison, parce que pour moi n<\/span><span lang=\"en\" style=\"color: #000000;\">l n'y a rien de mieux qu'un produit fait maison.<\/span><\/p>\n<p><span style=\"color: #000000;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-4717 lazyload\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" data-src=\"http:\/\/i2.wp.com\/madamebulgaria.com\/wp-content\/uploads\/2016\/11\/Capture-d%E2%80%99%C3%A9cran-2016-07-14-%C3%A0-16.33.56.png?resize=272%2C127\" alt=\"\" width=\"272\" height=\"127\" \/><\/span><\/p>\n<p><span lang=\"en\" style=\"color: #000000;\"><strong>Ingr\u00e9dients pour 6\/8 personnes :<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">1 kilo de poivrons rouges (= 8\/10 poivrons rouges),<\/span><\/li>\n<li><span style=\"color: #000000;\">1 aubergine,<\/span><\/li>\n<li><span style=\"color: #000000;\">1 cuill\u00e8re \u00e0 soupe de concentr\u00e9 de tomates,<\/span><\/li>\n<li><span style=\"color: #000000;\">3 cuill\u00e8res \u00e0 soupe d'huile ordinaire (ex. tournesol),<\/span><\/li>\n<li><span style=\"color: #000000;\">1 gousse d'ail,<\/span><\/li>\n<li><span style=\"color: #000000;\">1 cuill\u00e8re \u00e0 soupe de sucre,<\/span><\/li>\n<li><span style=\"color: #000000;\">1 cuill\u00e8re \u00e0 soupe de vinaigre,<\/span><\/li>\n<li><span style=\"color: #000000;\">2\/3 pinc\u00e9e de sel,<\/span><\/li>\n<li><span style=\"color: #000000;\">1 pinc\u00e9e de poivre rouge moulu,<\/span><\/li>\n<li><span style=\"color: #000000;\"><strong>+ un mixeur ou un robot pour m\u00e9langer toute la pr\u00e9paration.\u00a0<\/strong><\/span><\/li>\n<\/ul>\n<p><strong><span lang=\"en\"><span style=\"color: #000000;\">Bien entendu, vous pouvez adapter ces ingr\u00e9dients \u00e0 votre go\u00fbt et cr\u00e9er votre propre recette de lutenitsa.<\/span><\/span><\/strong><span lang=\"en\"><span style=\"color: #000000;\"> De plus, au lieu d'acheter un\u00a0<\/span><\/span><span lang=\"en\"><span style=\"color: #000000;\">Le concentr\u00e9 de tomate est d\u00e9j\u00e0 pr\u00e9par\u00e9 dans le commerce, mais vous pouvez aussi le pr\u00e9parer vous-m\u00eame. J'ai simplement d\u00e9cid\u00e9 de ne pas faire beaucoup de pr\u00e9paration pour cette fois et de l'acheter dans le commerce.\u00a0<\/span><\/span><span lang=\"en\" style=\"color: #808080;\">Pr\u00e9cision : sur ma premi\u00e8re photo, il y a une courgette mais elle n'\u00e9tait pas pr\u00e9vue, donc n'en tenez pas compte, elle aurait bien aim\u00e9 faire partie du programme.... Commencer par les poivrons rouges.\u00a0<\/span><span lang=\"en\" style=\"color: #000000;\">L'\u00e9vaporer et l'\u00e9p\u00e9piner et le disposer sur une plaque \u00e0 p\u00e2tisserie. Placer la plaque en position grill \u00e0 200\u00b0C et faire griller en retournant \u00e0 chaque fois lorsque de grosses cloques brunes se forment. Griller les poivrons de tous les c\u00f4t\u00e9s. Une douce odeur de poivron se r\u00e9pand dans la cuisine. R\u00e9servez les poivrons dans un plat couvert, la peau s'enl\u00e8vera plus facilement.\u00a0<\/span><span lang=\"en\" style=\"color: #000000;\">Enveloppez l'aubergine dans du papier d'aluminium, placez-la \u00e0 mi-chemin dans le four et faites-la cuire \u00e0 200 \u00b0C pendant 30 minutes. Laissez-la refroidir dans un saladier (voici un excellent article sur les saladiers en bois de <a href=\"https:\/\/www.kitchenistic.com\/best-wooden-salad-bowl\/\">Kitchenistic<\/a>) en le fendant en 2 ou 3 endroits pour en faire du jus. Normalement, il faut \u00e9plucher les poivrons et l'aubergine mais je n'ai \u00e9pluch\u00e9 que l'aubergine, hacher l'ail (pour une meilleure digestion, enlever le c\u0153ur de la gousse d'ail). Mettre tous les ingr\u00e9dients dans un robot \u00e9lectrique ou comme moi dans un blender et mixer suffisamment pour obtenir une p\u00e2te lisse et homog\u00e8ne. Servir frais en entr\u00e9e ou tartin\u00e9 sur des toasts en ap\u00e9ritif. Je l'ai go\u00fbt\u00e9, et pour une premi\u00e8re fois, je suis tr\u00e8s fi\u00e8re de moi, tr\u00e8s bon !\u00a0<\/span><span lang=\"bg\" style=\"color: #000000;\">\u0411\u043e\u043d
